Fritters are a great snack or meal for little tummies and, let’s be honest, big tummies too. These bright green ones pack a flavour punch and are sure to be a hit.

MAKES 15-20 fritters 

2 cups frozen peas

½ cup spinach

⅔ cup flour

2 eggs

1 teaspoon baking powder

⅓ cup feta, crumbled

1 clove garlic

1 tablespoon vegetable oil

Freshly ground pepper


Boil the peas until bright green and tender. Once cooked, keep one cup of peas to the side, and place the second cup, along with the rest of the ingredients, in a food processor or blender. Pulse until all ingredients are combined. Mix the reserved peas back into the batter.  

Heat the oil in a large pan on a medium heat. Drop heaped tablespoons of batter onto the pan. Cook for a few minutes until air bubbles form on top, then flip and cook the other side until golden. Repeat with the rest of the mixture. 

Simply serve by themselves, or with plain yoghurt and chutney.
